New Yorkers take great pride in their bagels: a perfect combination of chewy and crispy that inspires religious-like devotion. A recent article in the New York Times Magazine went so far as to suggest that it’s impossible to get a great bagel in California. But are New York bagels actually better than California bagels, or are they just different? We’ll chew over the question of the perfect bagel with local bakers and writer Elizabeth Weil.
