Recipe: Trans Atlantic – Sherry Shrub Cocktail

Ingredients:
- 2 ounces medium dry amontillado sherry
- 1 ounce housemade plum shrub
- Seltzer water, to taste
- Lemon twist, for garnish

Instructions:
- Combine the amontillado sherry with the plum shrub in a shaker filled with ice. Shake and pour into a glass with ice.
- Top with seltzer water and a lemon twist.
- Serve immediately.
Recipe: Quince Shrub

Ingredients:
- 2 cups white wine, such as Chardonnay
- 2 cups white wine vinegar
- 3 cups sugar
- 1 teaspoon fine sea salt
- 1 1-inch vanilla bean pod, split lengthwise
- 5 peppercorns
- 1 1/2 pounds quinces (2 to 4), peeled, quartered, and cored
- 1/2 cup Champagne vinegar

Instructions:
- Preheat the oven to 350 degrees.
- In a deep roasting pan combine the wine, vinegar, sugar, salt, vanilla bean, peppercorns and quince.
- Roast until the quince is tender, about 2 1/2 hours.
- Strain through a fine sieve and add the 1/2 cup Champagne vinegar.
- Pour into a jar with a tight fitting lid. Allow to cool. Store in a cool, dark place.
