Recipe: Trans Atlantic – Sherry Shrub Cocktail

    Ingredients:
  • 2 ounces medium dry amontillado sherry
  • 1 ounce housemade plum shrub
  • Seltzer water, to taste
  • Lemon twist, for garnish
    Instructions:
  1. Combine the amontillado sherry with the plum shrub in a shaker filled with ice. Shake and pour into a glass with ice.
  2. Top with seltzer water and a lemon twist.
  3. Serve immediately.

Recipe: Quince Shrub

    Ingredients:
  • 2 cups white wine, such as Chardonnay
  • 2 cups white wine vinegar
  • 3 cups sugar
  • 1 teaspoon fine sea salt
  • 1 1-inch vanilla bean pod, split lengthwise
  • 5 peppercorns
  • 1 1/2 pounds quinces (2 to 4), peeled, quartered, and cored
  • 1/2 cup Champagne vinegar
    Instructions:
  1. Preheat the oven to 350 degrees.
  2. In a deep roasting pan combine the wine, vinegar, sugar, salt, vanilla bean, peppercorns and quince.
  3. Roast until the quince is tender, about 2 1/2 hours.
  4. Strain through a fine sieve and add the 1/2 cup Champagne vinegar.
  5. Pour into a jar with a tight fitting lid. Allow to cool. Store in a cool, dark place.
