Leslie visits with Paul Canales, chef/owner of Duende restaurant in Oakland, where he shares his recipe for making Spanish jamón. They taste and pair Spanish wine while chillin’ in the fridge.

2015 Ontañón “Clarete” Rioja, Spain $13
If you’re a lover of rich whites and delicate pinks, this unique style from the family-owned winery Bodegas Ontañón, is for you. Called Clarete, it’s crafted of Rioja’s classic white grape, Viura, with a splash of the red variety, Tempranillo. Pale in color with a hint of pink prettiness, the floral aromas and vibrant citrus/cherry flavors make it a wine to pair with fish dishes, salads, and fresh cheeses. A perfect sipper.

2015 Marqués de Cáceres Rosado, Rioja, Spain $10
One of the hidden treasures of the famed region of Rioja in Spain is pink wine. Deliciously dry yet fruit-driven styles of Rosado are worth seeking out. The garnet-hued color of this wine pleases the eyes while the succulent red berry flavors and refreshing acidity tease the palate. Made with the signature red variety of Rioja – Tempranillo – from one of the top producers of the region, it’s an affordable rosé to drink year round.

2012 Cantos de Valpiedra, Rioja, Spain $22
This elegant Tempranillo showcases Rioja’s youthful style. A kick of spice and intense red fruit aromas jump from the glass, while a silky texture greets you with each taste. Made with grapes from the Finca Valpiedra estate, it’s a complex yet refreshing red. Sip alongside jamón, of course, but pair it with dishes from roast chicken to grilled mushrooms and eggplant.
