What’s your favorite Filipino fusion food? It’s a fascinating (and perhaps redundant) question, especially given the rich history of the Philippines, where a blend of cultural influences — like Chinese and Spanish — shaped the cuisine as we know it today. In the Bay Area, where Filipino food continues to innovate, one standout is Señor Sisig. This local Filipino-Mexican fusion favorite began as a food truck in 2010 and now has multiple brick and mortar locations serving up tocino tacos and tosilog burritos to its adoring fans. We tried the sisig burrito, which was loaded with both garlic rice and fond childhood memories. There’s also a sisig bowl, if you happen to be tortilla-averse.
