If you're not fortunate enough to have an abuelita, or grandma, willing to teach you the secrets of the tamal, you have two options. Befriend one, or attend a tamale-making class. There was a class recently at La Cocina, the San Francisco-based food business incubator with a commercial kitchen and a very particular social mission.
